Vietnamese Spring Rolls
100g Pork
100g Fresh Prawns
Small handful of carrots, peas (tinned or fresh), bean sprouts, dried mushrooms (soaked), dried noodles
1 spring Onion
Coriander
Finely chop the pork and prawns together. Grate the carrot and then chop finely together with the bean sprouts. Break the dried noodles into small pieces and add to the mixture. Crush the peas and add. Chop the spring onion, coriander and add together with a good pinch of black pepper, half a teaspoon of chicken stock powder and half teaspoon of 5 spice powder.
Mix together well with your hands.

Creating your Spring Rolls
Lay out your rice paper and add a small amount of mixture in the centre and begin to roll from 1 side. Half way along fold in the sides like wrapping a parcel ensuring that the ends are straight and finish rolling.
Deep fry in hot vegetable oil for 3-5 mins until golden brown.

The Dipping Sauce
1 medium chili
2 cloves of garlic
½ lemon
Finely chop the garlic and chili together and add the juice of ½ lemon together with 2 teaspoons of sugar, 1 dessert spoon of water, 4 dessertspoons of fish sauce.

Banh Xeo Country Pancakes
2 cups of banh xeo mix (if not available use rice flour with a pinch of turmeric)
25g fresh shrimps
25g Pork
Handful of bean sprouts and grated carrot
Put the bahn xeo mix in a bowl and gradually add cold water until you have a smooth pancake like mixture. Chop both the shrimps and pork separately into small pieces. Add salt and pepper and mix.
Heat a little vegetable oil in the pan and fry ½ of the shrimp and pork. Spread out the shrimp and pork in the pan so that they will be evenly distributed in the pancake. When cooked pour the batter mix around the shrimp and meat until all gaps are filled. Cover the pan all allow to cook for about 3 mins or until the batter has set.
You may need to add a little extra oil around the edge, add by lifting the pancake. Sprinkle the carrot and bean sprout across the top of the pancake. Cover again and leave for 1-2 mins. Finally fold the pancake over in half and cook for a remaining minute.

To Serve
Serve with a bowl of lettuce, (mint and coriander optional but really good), thinly sliced cucumber, rice paper and the same sauce prepared for the spring rolls.
